Wanting to install a coolant temp gauge and wondering if there is a different way so I don't have to cut a radiator hose.

Nope. Not that I can think of.

It may be intimidating, but its really no big deal. Some people have used the upper radiator hose and others the small U hose by the thermostat.

I'd think sticking a temp sensor someplace other than in one of the hoses would simply get a reading of that location and if it were in the block like an oil pressure sensor, it would just be reading the block temperature and not the coolant.
